Know your Eggs

A fresh egg will sink in water.

Old ones are smooth and shiny,
fresh ones are rough and chalky.

Eggs beat up lighter and make a better cake when they are not too cold.
(When making angel food cake or a sponge cake,
remove your eggs from the fridge several hours before use.)

    one more: Older eggs are best for hard boiling, they peel easier than fresher eggs.
